Today, I’m excited to share one of our family favourites: Greek-Inspired Sheet Pan Chicken Thighs. This dish is not only packed with flavour but also rich in nutrients, making it a perfect addition to your weeknight meal plan.
This recipe is a wonderful blend of Mediterranean flavours, featuring juicy chicken thighs, vibrant vegetables, and a tangy marinade that ties everything together. It's a hit in our household and among my clients for its simplicity and delightful taste.
Marinade
1 lemon, juiced (about 3 tbsp)
4 garlic cloves, minced
2 tbsp fresh chopped parsley
1/2 cup extra virgin olive oil
1 tsp Dijon mustard
2 tsp dried oregano
1 tsp dried thyme
1 1⁄2 tsp salt
1⁄2 tsp black pepper
Ingredients
1 pepper, chopped into pieces
1 medium zucchini, halved & sliced
1 pint cherry or grape tomatoes, cut into wedges
1⁄2 large red onion, thinly sliced
12 chicken thighs, bone-in, skin-on
1⁄2 cup Kalamata olives
1/3 cup light feta
1 cup rice
Instructions
Prepare the Rice: Start by cooking the rice according to the package instructions. Rinse it thoroughly before cooking.
Preheat the Oven: Set your oven to 425°F (220°C).
Make the Marinade: In a small bowl, whisk together the lemon juice, minced garlic, chopped parsley, extra virgin olive oil, Dijon mustard, dried oregano, dried thyme, salt, and black pepper.
Marinate the Chicken: Place the chicken thighs in a large bowl and pour 2/3 of the marinade over top. Use your hands to toss the chicken, ensuring each piece is well coated. Let it marinate for 15 minutes.
Prepare the Vegetables: While the chicken is marinating, spread the chopped pepper, zucchini, tomatoes, and red onion onto a baking sheet. Drizzle with the remaining marinade and add an extra pinch of salt. Toss everything together to coat the vegetables evenly.
Bake the Chicken and Vegetables: Nestle the marinated chicken thighs around the vegetables on the baking sheet. If needed, use two pans to avoid overcrowding. Bake for 30 minutes.
Add the Final Touches: Remove the pan from the oven and sprinkle the Kalamata olives and light feta over the top. Return to the oven and bake for an additional 15 minutes, or until the vegetables are tender and the chicken is cooked through (internal temperature should reach 165°F).
